Micellaneous Monday!

We had a great weekend with family! We ate we drank and we celebrated the newlyweds Reid & Lexi! The wedding could not have been more perfect and more of a wonderful reflection of them! My poor car is in the shop again on this gloomy Monday morning! But, that is OK because it is Miscellaneous Monday!!!!! ENJOY! **UPDATE** My little car Flossy is doing OK! Thank you Lord**

Couscous Salad

Recipe by: Valerie Wheeler


1 box couscous (any flavor)

Dill

Juice of one lemon

Parsley (Italian)

Cherry Tomatoes

Bell Pepper (any color)

Edamame (steamed)

Olive oil


Directions:


Cook couscous according to directions (I use chicken stock instead of water)

Add the lemon juice

Add dill

Add parsley

Cut up the tomatoes into fourths and add them

Dice up the bell pepper and add

Steam Edamame and add (I use the steam in the bag kind)

Drizzle olive oil on top


Chill until cool throughout and serve


SO GOOD!!! Healthy and perfect for a light summer side or snack!




This last weekend was the BIG wedding weekend for Chandler's cousin Lexi!
