Girls Weekend...

Channing and I have been having a girls weekend because Chandler went to KS for his Grandad's surprise birthday party. I wish we could have gone but since the drive is pretty long and Channing does NOT enjoy the long drives quite yet we stayed put.

We took afternoon bike rides!

It was an awesome weekend with my sweet girl! We even ran errands with Breen on Saturday too! Today as soon as Chandler gets home we have an 8 mile run to get in before Trunk or Treat! Then tomorrow a HUGE carnival at Grammie & Pappa Scotts hood'! Fun will be had!

THANK GOODNESS IT'S THURSDAY!

This semi had spikes on it's tires like the 'mean' car in the movie Grease. I didn't like driving beside him.


This CUTE & CRAZY girl looked super cute in her Halloween wear this morning... its a good thing because she gave us a ROUGH night last night. From about 2:30 until 4 something AM she threw HUGE fits drank milk wanted to get off our bed but not in her bed, wanted to get down but when we would put her down she would scream! I was thrown for a loop let me tell ya! I have no idea what was wrong... I am hoping it's teeth or something because I am hoping there was a reason other than being a 'toot' ! All the aggravation goes away when she wakes up happy and hugs you... Thank goodness cause girlfriend was cruisin last night :)!


I wore my Ranger colors yesterday and the game was cancelled.... BUT I wore blue again today so here's hoping they are WINNERS!


This was on the way home yesterday hahahaha! She was eating raisins and started laughing and I turned around and she was acting like one was her tooth and thought it was so funny... it was funny... made me laugh too!

Cornflake Chocolate Chip Marshmallow Cookies





Makes fifteen to twenty
Ingredients:




16 tbsp. (2 sticks) room-temperature butter




1¼ c. granulated sugar




2/3 c. light brown sugar, tightly packed




1 egg




½ tsp. vanilla extract




1½ c. flour




½ tsp. baking powder




½ tsp. baking soda




1½ tsp. kosher salt




3 c. Cornflake Crunch




2/3 c. mini chocolate chips




1¼ c. mini marshmallows




1. In the bowl of a stand mixer fitted with the paddle attachment, combine butter and sugars; cream together on medium-high 2-3 minutes. With a spatula, scrape down sides of bowl, then add egg and vanilla and beat 7-8 minutes.
2. Reduce speed to low; add flour, baking powder and soda, and salt. Mix just until dough comes together, no longer than 1 minute. (Do not walk away from the machine during this step or risk overmixing.) Scrape down sides of bowl.
3. Still on low speed, paddle in cornflakes and chips until just incorporated, about 30-45 seconds. Paddle in marshmallows.
4. Line a sheet pan with parchment paper. Using a 2-oz. ice cream scoop, portion 1/3 c. dough at a time onto pan. Pat tops of dough domes flat. Wrap pan tightly in plastic wrap and refrigerate for at least 1 hour or up to 1 week. (Do not bake room-temperature disks — they will not hold their shape.)
5. Heat oven to 375°. On a parchment- or Silpat-lined sheet pan, arrange chilled disks a minimum of 4 inches apart. Bake 18 minutes, until cookies are browned on edges and just beginning to brown toward the center. Cookies will puff, crackle, and spread. Leave them in oven for another minute or so if they still seem pale and doughy on the surface.
6. Cool cookies completely on pan before moving them to a plate or an airtight container for storage. At room temperature, cookies will keep fresh for 5 days; in the freezer, they will keep for 1 month.

Micellaneous Monday

Today starts Channing's 'week of halloween wear'! I didn't have time this morning to take her


Monday picture (shocking I know) but I will take it when we get home from work/school. It


won't be as good because she usually has rubbed food in her hair and looks all crazy from playing


on the playground but I will take it anyhow.



Not that many peeps out there care but I made pumpkin turkey chili last night via Heather


Bakes blog and it was super yummsies. I meant to take a picture but we ate after Channing went


to bed so I was so hungry I just ate away without taking the pic... oh well. Tonight I think I


am going to make the chicken taquitos that she posted about... I think I have everything for


them and they sound so good!

Weekend Tidbits

The first pic is of my sweet friends baby Dylan Paige going home from the hospital and can we all take a moment to admire Chelsea's push present?!?! A lovely little rock huh?! It's Dylan's birthstone and it is fab!

Yesterday night we celebrated chandlers 30th birthday with our families! He got a Bradley Smoker from us and he was pumped!

Today my mom came over and watched Channing while we ran! We beat our other times by a long shot!! We are pumped and now we are relaxing and getting ready for the week! Anticipating pumpkin chili and wine while watching the amazing race!
