Monday was good. Monday's are always a little more tiring for our family but this one was tiring and good. Channing's allergies are CRAY right now and it makes her look pretty sad especially on a Monday morning. Anyhow she said she felt better after school.
When I got home from my run we ate Potato Soup.... from the crockpot. It was a Paula Dean recipe I found on Pinterest...
Paula Dean's crockpot potato soup recipe. Combine 1 bag frozen hash browns, 2 (14oz) cans chicken broth, 1 can cream of chicken soup, 1/2c chopped onion, 1/3tsp black pepper. Cook in crock pot on low for 5hours. Stir in 8oz block of cream cheese, cook 30 minutes, stir occasionally.
Seriously, that is it and it was good. I use low sodium everything and low fat everything else. The only thing I would probably do different is use cubed hash browns and maybe more than one bag... to make it a bit heartier. Oh, I also just used a box of the chicken broth which I think is 32 ounces instead of 2 cans.
Anyway, we were tring to get Channing to eat it for dinner because she was trying to play and we told her we couldn't go on a bike ride unless she ate dinner. She stopped and looked at me and said, 'momma, we already had that soup like 100 years ago'.
First of that we have never had THAT soup before and second where did she get that?! It did make us laugh though and as you can see below... she ate it. I have learned we have to stick to what we say and she ate it so we were able to go on a bike ride. Whew!

I turned around during her bath to grab something and when I turned back to watch her I found her like this... she is so funny! I asked her what she was doing and she said 'relaxing'. 

A little after dinner snack... the mini's of these that I found at Target may be the end of me... I cannot get enough. Seriously so good but one tiny little tub is like 400 calories... oh well. 

And I will end on the fortune I got in my cookie at lunch today.

Happy Tuesday.... Must mean I need wine tonight.
